莫斯科国际糖果节:乐享俄罗斯的甜蜜滋味

近日,莫斯科第七次举办国际糖果节。前来观展的游客能看到具有异国情调的拉丁美洲巧克力、焦糖熬制的画作等各种甜食,并亲自参与糖果的制作。姜饼、“阿廖卡”巧克力、帕斯蒂拉、水果干等俄罗斯特色甜食也亮相糖果节。

The International Sweets Festival has come to Moscow. The event was held for the seventh time. Visitors to the exhibit were able to see exotic chocolate from Latin America, whole paintings made from caramel, Russian gingerbread decorated with various patterns, halva, jams, and pastila.

近日,莫斯科第七次举办国际糖果节。前来观展的游客能看到具有异国情调的拉丁美洲巧克力、焦糖熬制的画作、式样各异的俄罗斯姜饼。俄罗斯姜饼一般点缀着酥糖、果酱和帕斯蒂拉(pastila)。
Gingerbread can rightfully claim to be one of Russia’s original sweets. A dessert called “honey bread” was first enjoyed in Ancient Egypt and came to Russia in the 9th Century, when the legendary Rurik and Oleg of Novgorod joined together separate East Slavic and Finno-Ugric tribes to form a unified state.

At that time, gingerbread was made from rye flour mixed with honey and berry juice. It got its modern name when people started enhancing this recipe with spices from India and the Middle East. These spices first appeared in Russia in the 12th-13th centuries. This is gingerbread has “Arkhangelsk” written on it. This city is located 1200 kilometers from Moscow, but the most famous Russian gingerbread comes from a city much closer to the capital: Tula, about 120 miles south of Moscow.

Tula is also famous from the samovars that it manufactures. Made from copper or brass, capable of producing 26 gallons of tea or only a thimble-full, each samovar tells a story of the city – and of Russia.

Russian merchants have long enjoyed strong trading links with the Middle East and one of the most popular Russian sweets – pastila – is reminiscent of Turkish Delight. These days, pastila is enjoying more and more popularity, a fact well represented in the hundreds of recipes for make it. Some of those include nuts, fruits, berries, and caramel.

Candy production could be jokingly called Russia’s national idea. No matter what upheaval the country has gone through – war, revolution, economic implosion – the production of sweet things never stopped. Many candies have kept the Soviet design on their wrappers.

Most of Russia has a northern climate, and its brief summers mean fruit is scarce. As a result, hardy varieties of apple are a favorite ingredient in Russian cooking. They can be baked or dipped in caramel.

Smokva (Fruit Leather).  This sweet has almost been forgotten, but you can still find it in some Russian villages. In the olden days this was known as “dried paradise apple.” In essence, it tastes a bit like modern-day fruit pastels. It is made by boiling up pectin-rich fruits such as apples, quinces, plums and rowanberries.

They learned how to make chocolates with fillings, how to make a gingerbread house, how to make caramel lollipops, and, perhaps most importantly, how to decorate and eat them.

Another very popular type of sweets was chocolate-glazed fruits. They were based on a French import and their recipe was a closely-held secret. Abrikosov secretly built a factory on the Black Sea to create his chocolate-glazed fruits.
